Here are some quick and delightful recipes with the super healthy makhana:
1. Curry
It is a unique sabzi, light and satisfying with a fantastic taste. To cook it, put makhana in a bowl and roast it till it gets crisp. In a pan, heat oil and sauté half of chopped onions, sesame seeds, cashews and garlic and add a little water to the paste. Later on, add the tomato puree, turmeric and coriander powder and cover the pan. Drop the roasted makhana and mix well. Garnish with coriander leaves and enjoy the sabzi with roti or rice.
2. Raita
Makhana’s raita is a simple Indian relish made from yogurt which is mixed with roasted makhana, a pinch of salt and Indian spice powders. An easy recipe that is a variation to the normal raita made from vegetables or boondi.
3. Kheer
A delicious kheer made out of makhana, it is rich in flavours like saffron and nutmeg. Made out of condensed milk and mixed with roasted makhana while adding a few tablespoons of sugar, is the perfect dessert for special occasions. Tastes better when served cold!
4. Tikki
Surprised? Well, makhana gives you us immense possibilities for experimentation. To prepare, mash potatoes in a bowl and add chilli powder, roasted makhana and salt to it. Mix well and make oval patties. In a pan, add oil and add patties, leave till its golden brown. Serve with ketchup or coriander chutney. A protein filled snack!
