Indulge in the goodness of fruit soups that are served cold, apt for the hot weather.
Here are some suggestions:
1. Watermelon Soup:
Watermelon is heaven to beat the summer heat. Make soup out of it to get the best of its flavour. Grind watermelon cubes in a food processor and strain it. Mix lemon juice, vinegar, olive oil, salt and pepper to it and refrigerate it. Serve cold. You can also add cubes of cucumber and melon to it to enhance the flavour.
2. Gazpacho:
Try Spanish cold soup Gazpacho this summer which takes you on a flavourful journey. Blend capsicum, onion, tomato, cucumber, fresh basil, garlic and pepper in a food processor and strain the mixture. Add salt to it with lemon juice and put it in the refrigerator. Serve it with basil leaves, olive and cucumber chunks and enjoy.
3. Pink Soup:
Indulge in the goodness of strawberry with cold strawberry soup. Mix strawberry, yoghurt, orange juice, fresh mint and salt in a blender until the content becomes smooth and creamy. Refrigerate it for two hours and serve with croutons and pumpkin seeds.
4. Cucumber Soup:
Cold cucumber soup is a delicacy enjoyed in many parts of the world with slight variations. Blend English cucumber, almond milk, apple, mint leaves, garlic, spring onion, lime juice and salt in a food processor and refrigerate it. Garnish it with chopped almond, mint leaves and cucumber. Add pepper to it and enjoy it on a hot evening.
