Drawing inspiration from the royal Rajasthani cuisine, Holiday Inn Cochin is celebrating the Rajasthani Food Festival at Masala, Restaurant to attract the food lovers in the city. The lavish and regal menu will be featuring a variety of Rajasthani delicacies.
The festival started in the mid of this month and will end on 23rd September 2018 at 7:30 pm. The guests can savour appetisers like Lasooni Chutney, Dahi Boondi, Subz Tokri before going for the main menu. The main course includes authentic dishes like the Barwan Bhindi, Aloo Katliya, Papad Mangodi, Bhindi Jaipuri, Sev Tamatar, Khadka murgh, Laal Maans, Murgh Jodhpuri, Jungli Maans, all-time favourite Dal Baati Churma and lots more.
The menu has been curated by Chef Surendra Singh who is based out of Jaipur. The menu also features traditional rice preparations GattaPulao and Maans Ka Pulao. The main dishes can be enhanced with the classic sides like theRajasthaniKadhi or DaalPancharatni and top it with a lavish serving of accompaniments like Kaleji Raita, Sogra, Bikaneri Parantha, Daal khichuri Parantha. Do not forget to leave space for desserts like Mirsi Marwa and Malpua with Rabri. To add authenticity and to impart the true flavours to the dishes, most of the produce, herbs and ingredients have been procured directly from Rajasthan.
Chef Surendra spoke to the media, “While Rajasthani food is famous for being hot, we have muted down the fieriness a bit to suit the palates of our international as well as local guests who are curious about India’s different regional cuisines.”
