Mascarpone Cheese – 150gm
Whipping Cream – 150gm
Savoiardi/Ladyfinger Biscuits – 200gm
Icing Sugar – 110gm
Espresso – 1 Cup
Diplomatico Reserva Exclusiva – 50ml
Cocoa Powder – to dust on top
1.Brew some fresh espresso. Add sugar to mildly sweeten it and let it cool down. Later, add the rum to the syrup and combine.
2.For the Tiramisu filling, add softened mascarpone cheese in a bowl and add icing sugar. Combine them well. Add in your whipped cream and gently fold it in. Once it’s all combined, set it aside.
3.To assemble the tiramisu, soak the savoiardi biscuits in the espresso + rum syrup and place them all over the base of your serving dish. Top this off with a layer of mascarpone cheese filling, spread it evenly and dust cocoa powder on top. Repeat this layering a couple of times and finally dust some more cocoa powder over the top.
4.Let it rest in the fridge for 1 hour. Cut in and garnish with another layer of cocoa powder and some coffee beans.
