Light seafood, peak-season produce, and, of course, plenty of mango set the tone for this sun-kissed spread. The summer menu at Toast Pasta Bar is always built on a simple idea of what’s best in the heat, what’s at its freshest, and how to make every bite feel like a summer holiday in Italy.
“Our summer menus are always based on what I’d like to eat during this time of year, what’s at its seasonal best,” says Chef Devika. “At Toast, we stay true to our philosophy of fresh, local, and seasonal ingredients. This summer, we’re making the most of delicate seafood, refreshing fruits, and light, bold flavors.”
The menu offers a thoughtful selection of dishes that celebrate bold flavors and seasonal ingredients. The Cured Asian Seabass Crudo, featuring locally sourced bekti with pickled mango, Calabrian chili, and mint, is sweet, spicy, and refreshingly bright. For a rich yet delicate indulgence, the Tagliolini with Prawns combines mascarpone, lemon, and dill in a light, creamy sauce. Those who love earthy flavors will enjoy the Trofie with Wild Mushrooms, where cream, garlic, and parsley come together in perfect harmony. For heartier options, the Pan-Fried Snapper with cauliflower purée and salsa verde offers a balance of crisp and creamy textures, while the Half Roast Chicken with truffle and onion jus, served alongside potato purée, delivers deep, comforting flavors.
The Vanilla Bean & Lime Panna Cotta is a refreshing, citrus-kissed treat with Alphonso mango and Gondhoraj granita, while the White Chocolate Cheesecake pairs Alphonso mango with passionfruit and a buttery graham cracker base for the perfect tropical bite.
