ACROSS, Mumbai’s first modernist Himalayan cuisine destination in Kala Ghoda, introduces an exciting evolution of its menu, offering a refined selection of food and cocktails that celebrate the rich gastronomic heritage of the Himalayas. Led by Chef Viraf Patel and Prakriti Lama, The restaurant continues to blend Himalayan authenticity with modernist techniques, delivering bold flavors and innovative pairings.
The refreshed cocktail lineup highlights unique regional ingredients. The Paulite combines tequila, Aperol, and amaretto for a bold fusion, serving as a toff of the hat to St. Paul’s School in Darjeeling, a cherished institution favored by royals and gentlefolk. Meanwhile, Roll in the Field balances soju with Himalayan gin and arugula. Big Foot blends bourbon, Himalayan gin, and amaretto for a smoky depth, while Citrus Sunrise infuses Himalayan gin with fresh Malta orange and kaffir lime for a citrus-forward experience, reminiscent of eating chilled oranges on a cold day while sitting in the sun.
Complementing these libations, the food menu features thoughtfully crafted dishes inspired by Himalayan traditions. The Mustang Black Dal is a rich Thakali dal, sourced from the Thak Khola region – an arid area where little grows except potatoes and this hearty, flavorful dal. It is tempered with ghee and jimbu, served with ghee-infused rice, chutney, and pickles. The Meatless Momo reinvents dumplings with a flavorful stuffing of pokchoy heart, spring onions, and homemade mock meat in our attempt to come as close to a meat-filled momo as possible. Served with spicy tomato chutney.
The Kothey Momo presents pan-fried crispy chicken pot stickers, while Aloo Fing Duck offers a fusion of duck leg, mung bean noodles, and potatoes in a spiced umami tomato and turmeric sauce with the heat of Tibetan timur. The Timur Crispy Jackfruit delivers a crunchy jackfruit steak with cucumber salad and perilla seed chutney.
