After winning hearts in Mumbai, Mizu Izakaya is making its mark in Goa with its very First outlet at 8 Boheim Avenue in Siolim right next to the serene Siolim Bird Sanctuary. Staying true to its core philosophy Mizu’s new space embraces Goa’s vibrant charm, offering a fresh, laid-back take on the Japanese Izakaya experience.
What started as a shared dream between childhood friends Chef Lakhan Jethani and Vedant Malik became a reality in 2021 with the launch of Mizu Izakaya, India’s first true izakaya. With its unapologetic focus on flavor and authenticity, Mizu has earned its place as a culinary gem bringing Japanese precision to the Indian palate, no shortcuts, no theatrics, just pure craft. “Goa felt like a natural progression,” says co-founder Vedant Malik. “It gives us the room to breathe, to grow, and to evolve the way we’ve always wanted to. The energy here fits the izakaya culture unhurried, generous, and full of heart.”
The Goa Kitchen continues to showcase the signature dishes from its Mumbai flagship, including the Hokkaido Mentai Grilled Scallops, Maguro no Taru Taru, Matsuzakaya Shumai, Sizzling Mochi, and Kabochi Tart. With a strong emphasis on flavor and technique, the menu evolves thoughtfully over time, introducing new elements that enhance the dining experience.
At the bar, the experience shifts gears. Goa is home to Mizu’s first full walk-up bar, a central, high-energy space designed for movement, interaction, and rhythm. Head Mixologist Avantika Malik leads the bar program, bringing Mizu’s Japan-meets-technique philosophy to a coastal pantry. The result is a cocktail menu that feels layered but easy, rooted in place without losing the brand’s edge.
The desserts, led by Chef Nikhil Menon, Head Chef Pastry/Culinologist (R&D), are crafted to satisfy a variety of tastes. Chocolate enthusiasts will savor the Hazelnut Cacao, while vegetarians can indulge in the exquisite Autumn Lantern. To complete the indulgence, the whimsical Japanese Cotton Candy offers a sweet, fluffy treat that’s sure to captivate.
Designed by The Boheim Team, the space itself invites quiet immersion. A monochrome palette is layered with warm textures, curated greenery, and a soft flow of vintage Japanese films projected on muslin screens. The design moves between stillness and motion, blending minimalism with natural elements to mirror the very essence of Mizu fluid, present, and always evolving.
At the heart of it all is the hospitality. “We want guests to feel like they’ve stepped into something familiar yet elevated,” shares the team. “It’s not about putting on a show. It’s about creating connection through the food, the drinks, the atmosphere, and the details that bring it all together.”
Mizu Izakaya Goa isn’t a replication. It’s a reflection. A slow shift into something more grounded. A space that honours its roots while looking ahead with clarity, warmth, and a deep respect for the craft.
