Mann & Salwa’s flagship hospitality destination, The Primo, brings together three concept-led vegetarian restaurants under one roof, each shaped by a distinct culinary philosophy and spatial identity. Designed as a destination where food, design, and storytelling intersect, Sora, Sahtain, and Vyanj together create a new vocabulary for contemporary vegetarian dining in Ahmedabad.
Sora, the city’s first Asian-Peruvian vegetarian restaurant, blends the coastal brightness of Peru with the finesse of East Asian techniques. Set within an Art Deco-inspired space of marble tabletops, leather seating, and warm golden lighting, the restaurant moves through a sensory progression of bright raw plates, bold small plates, and comforting curries. Led by Chef Sadik, the menu celebrates contrast, texture, and precision.
Sahtain explores the generous culinary traditions of North Africa and the Levant through a vegetarian lens. Designed around the culture of sharing, the experience brings together regional spices, fresh herbs, and ingredient-driven cooking in a refined contemporary setting. Lebanese Chef Abdullah leads the kitchen, creating menus that balance authenticity with modern interpretation.
Vyanj reimagines Indian vegetarian cooking through seasonality, regional techniques, and open-fire preparation. Led by Chef Saurabh Udinia, the restaurant draws inspiration from culinary traditions across India, from Kashmir to Kerala, focusing on heirloom grains, clean flavours, and a thoughtful reinterpretation of Indian desserts.
Together, the three restaurants reflect Mann & Salwa’s evolution from a celebrated catering house into a multi-dimensional dining destination, where each concept offers its own distinct identity while remaining connected by a shared philosophy of craft, design, and hospitality.
