Seven Courses, One Year of Thai Vegetarian Storytelling
One year since opening its doors in Churchgate, tóa 66 marks its first anniversary with a special Anniversary Edit Menu, a limited tasting menu that reflects the restaurant’s journey through Thai vegetarian cuisine. Built as a seven course experience, the menu revisits the philosophy that has shaped tóa 66 from the beginning: cooking that draws from Thailand’s everyday food culture, its street stalls, home kitchens, market flavours and quiet rituals around food.
The Anniversary Menu is a reflection of the past year at tóa 66, bringing together flavours and dishes that have resonated most with guests across its evolving tasting menus. Marking a year of learning and refinement, the menu revisits signature flavours that have shaped the restaurant’s culinary identity while continuing to honour the techniques and traditions that lie at the heart of Thai cuisine.
tóa 66’s approach to food is continuously inspired by travels and lived experiences of its founders, Ishaa Jogani Shah and Deval Shah. Their extensive journeys across Thailand, exploring everything from local food stalls to family kitchens, remain central to the restaurant’s ethos. The kitchen, driven by the expertise of Thai chefs Kanchit and Natanong Vongvichai, prioritises authentic technique. This dedication ensures that even with an entirely vegetarian menu, the flavours are distinctly and unmistakably Thai.
Speaking about the anniversary, Ishaa Jogani Shah, Founder of tóa 66, says, “The past year has been about understanding how people connect with Thai food in this format. The Anniversary Edit is a reflection of that journey, dishes that represent the flavours we’ve explored, refined and grown with over the last year.”
This special menu opens with Miang Kham, a bite wrapped in chaplu leaves with toasted coconut, peanuts, pomelo and house sauce, a bright start that captures the sweet, salty and refreshing flavours of Thai cuisine. It is followed by Kway Tiew Lod, delicate handmade rice sheets paired with Penang sauce and coriander oil. The third course, Som Tam Thod, offers a playful take on papaya salad with fried papaya, green tomatoes and long beans, before moving to Phak Boon Moo Daeng, a stir-fried morning glory dish served with Thai-style tofu. For the main course, guests can choose between Kway Tiew Tom Yam, soft rice noodles in a mellow, slow-brewed tangy broth, or Khao Phad Krapao with Tom Kha, fragrant holy basil fried rice paired with a comforting coconut-galangal soup. The meal then transitions into Thap Thim Krop, a refreshing dessert of ruby-red water chestnuts in coconut milk and sala syrup, before concluding with Kra-Pow!, a layered dessert featuring dark chocolate crumb, Peruvian chocolate mousse, pistachio praline and pandan cream.
Complementing the tasting menu is tóa 66’s thoughtful bar program, designed to mirror the same philosophy of balance and authenticity. The beverage menu features a curated selection of wines and beers alongside wine-based cocktails inspired by Thai flavours. Drinks such as Jib Jib, blending mango, ginger, lime and red wine, and New Chiangmai Sour, combining lemongrass, kaffir lime and ginger beer with white wine, reflect the bar’s playful yet restrained approach to flavour.
For those who prefer to sip mindfully, the menu also includes a range of zero-proof creations, including drinks like White Lotus Mai Pen Rai, 66 Lemonade, and Sweet Nostalgia, which incorporate ingredients such as jasmine tea, kaffir lime, Thai brown sugar and sesame to echo the sweet, sour and aromatic notes intrinsic to Thai cuisine.
As tóa 66 completes its first year, the Anniversary Edit Menu stands as a quiet reflection of the restaurant’s journey so far — a continuation of its belief that Thai food is best experienced through thoughtful technique, honest ingredients and the simple joy of sharing a meal.
