St Regis Mumbai is dialing the culinary compass to Myanmar with an exclusive two-night feast curated by Dean With Us and celebrated Chef Phyu Cyn, popularly known as Chef Goo Goo, this April. On the 17th and 18th of April evening By The Mekong will transform into a vibrant canvas of flavors, capturing the essence of Yangon’s lively streets, Bangkok’s spice markets, and Paris’s eclectic kitchens. Goo Goo “feels” the flavors rather than follow rigid recipes, she grew up learning that great cooking isn’t just about technique, it’s about ‘mettā’ (compassion) and ‘cetanā’ (kind intention), two philosophies she still stirs into every bowl of mohinga or tea leaf salad she serves. Her style? Think street side soul food meets elevated Anglo Burmese finesse, all with the effortless charm of a global wanderer. Her dishes, rich with heritage and brimming with heart, transform ingredients into soulful narratives. From tangy tea leaf salads that sing with history to hearty mohinga that feels like a hug from Myanmar itself, every plate is crafted with authenticity and artistry. This isn’t just a pop up, it’s a delicious ode to Burmese soul and heritage.
Coinciding with Thingyan, Myanmar’s traditional New Year, the experience will also feature a special addition to the menu inspired by the festive season, offering guests a rare taste of dishes uniquely prepared for this celebratory time.
The experience is presented in collaboration with Dean With Us, founded by Akanksha and Rupali Dean, renowned across Asia for curating cross-cultural F&B showcases (and merge their profound expertise in food & travel writing, culinary arts, global travel, and event curation), marks a rare opportunity for Mumbai’s discerning diners to experience a slice of Burma’s progressive dining culture. Aligned with St Regis Mumbai’s vision of hosting globally inspired and thoughtfully curated events, the showcase brings together culinary storytelling, cultural exchange, and a celebration of evolving food traditions. With Chef Goo Goo at the helm, the pop up sets the stage for a one-of-a-kind exploration of Burmese cuisine through a contemporary lens.
Chef Goo Goo, born and raised in Yangon, draws on her Anglo Burmese heritage and Eurasian upbringing to craft dishes that balance authenticity with modern storytelling. Her culinary journey has taken her from shaping menus in Myanmar to serving progressive Burmese cuisine across the world. Known for her ability to translate the spirit of Myanmar onto the plate, she has collaborated with some of the world’s leading chefs and continues to be a rising voice in global culinary circles. Her pop-up resume reads like an enviable passport, feeding natural wine enthusiasts in Paris (where Alison Roman called her food ‘incredible’), joining forces with culinary royalty like Massimo Bottura, Gerald Passedat, and Andy Ricker, and surprising foodies from Goa to Geneva with layers of flavor they didn’t know they needed. On Instagram, under @_ladygoogoo_, she’s the charming culinary whisperer teaching people that Burmese food is the next big thing. Her signature style blends comfort, technique, and identity, with each dish rooted in intention, memory, and compassion. Goo Goo dreams big, but one dish at a time, she’s putting Myanmar on the global map. she’s known as the chef who can whip up the taste of Myanmar anywhere in the world without lugging a suitcase full of exotic spices. That’s talent.
Speaking about the pop up, General Manager, St Regis Mumbai, said, “At St Regis, we take immense pride in offering our guests globally inspired experiences that push boundaries and spark creativity.
