Foo is turning up the heat once again with The Fiery Edit 2025, ‘Drop it like it’s hot’ a limited-edition menu that celebrates bold flavours, deep smokiness, and a generous dose of spice. Back by popular demand, this year’s edition features a lineup of new dishes, inventive cocktails, and Foo’s own house-made sauces—because some fires are too good to put out.
The menu offers a dynamic mix of flavours designed to challenge and intrigue. Sushi gets a spicy new twist with Roll with the Rumours, a smoky, sesame-infused roll of soft cottage cheese and crispy poblano chillies, finished with a streak of sriracha heat. Meanwhile, It’s Maki Hot lives up to its name, layering salmon, avocado, naga mayo, and snacky red chillies for a bite that delivers both intrigue and intensity.
Dumplings may seem delicate, but Foo’s versions pack a punch. Dumplings Don’t Lie may start out soft and subtle, but bell peppers and water chestnuts quickly make way for the fire of habanero and chipotle. Chicken Under Wraps takes things further, with juicy chicken and crisp peppers wrapped in a dumpling that doesn’t reveal its habanero heat until it’s too late to turn back.
Foo’s Small Plates bring a bold mix of flavours, each dish packing just the right amount of heat and intrigue. The Double Cross starts off mellow with mock meat, smoky chipotle sauce, pak choy, and asparagus—only to crank up the heat when you least expect it. Scorched Wings delivers perfectly charred wings coated in a spicy hot chilli glaze, while Chase the Chicken takes a no-holds-barred approach, layering ancho dried chillies with snacky red chillies for a heat that doesn’t let up.
Meanwhile, Quit Noodling Around brings together wok-tossed noodles, poblano, and chipotle chillies in a deep, smoky sauce, while Rice and Everything Spice transforms pork lap cheong, egg, and chilli sauce into a dish that’s equal parts comforting and thrilling—because who says spice and comfort can’t go hand in hand?
For those who think dessert is a safe zone, Getting Jelly proves otherwise. A pink guava vanilla ganache, guava mousse, and fiery chilli guava jelly come together for a dessert that’s smooth, sweet, and just the right amount of spicy—because a little heat makes things interesting.
Foo’s cocktail program keeps pace with the menu, designed to complement and amplify the flavors of the dishes. Flames and Fantasies shakes things up with Absolut Citron, roasted broccoli juice, parmesan, and white chocolate syrup—unexpected, indulgent, and impossible to ignore. Ex on Fire balances Ballantine’s 7 Y.O., Aperol, and Pumpkin & Ginger Cordial for a drink that’s equal parts bold and playful. And for those willing to take a risk, Thirst Trap combines tequila, kimchi brine, mezcal, and asparagus honey—a smoky, spicy concoction that keeps you coming back for more.
Foo is bottling up its signature heat with new house-made sauces. The collection includes Whisper of Heat, a Yellow Habanero Sauce that delivers a slow-building warmth; Slow Simmer, a Chilli Black Bean Sauce rich with umami depth; and Red-Hot Rumour, a bold Hot Chilli Oil that refuses to be ignored.
