When we asked the chef about the challenges faced in recreating authentic Malabar flavours in Mumbai and how they have adapted them to local palettes, he said, “ As a chef, I relished the opportunity to recreate the bold flavours of Mangalore in Mumbai. While it wasn’t a challenge, it was an enriching learning experience. To capture the essence of Mangalorean cuisine, our chef team visited local markets to handpick unique Indian spices and ingredients typically found in Mangalorean stores, sourced fresh fish from the fish market early morning and also employed traditional slow-cooking method to balance authenticity with local preferences while also incorporating popular Mumbai ingredients while staying true to Mangalore’s authenticity.”
