In our last leg of the series on healthy monsoon snacks by Chef Narayan Salunke, Executive Chef, Radisson Blu Resort & Spa, Alibaug, we have our favourite frankfurters for our readers today.
Vegetable Frankfurter
Ingredients
Potato mash 100 gms
Red pumpkin mash 100gm
Cheddar cheese strips 100gm
Chopped garlic 10gm
Chopped red onions 100gm
Chopped carrots, baby corn,
mushrooms, asparagus 20gm each
Grated nutmeg paprika powder a pinch
Crushed black pepper a pinch
Salt- to taste
Bread crumb 150gm
Corn flour & refined flour 30gm each
Oil for deep frying
Method:
- Heat the oil, sauté garlic and onion till they turn light brown in colour.
- Add all chopped vegetables and cook for another few minutes, season it.
- Let it cool, mix it with mashed potato, pumpkin and nutmeg. Mix well.
- Take one strip of cheese and roll with the mixture.
- Shape them into about 10-cm sausages.
- Dip into the batter made of corn flour, refined flour and water.
- Roll in breadcrumb and deep fry till golden brown.
