This July, Taj Mahal, New Delhi welcomes Chef Deni Koswara, Master Chef at Nonya, Taj The Trees, Mumbai, for an exclusive limited-time culinary residency at House of Ming from 9th to 16th July 2026.

Marking Chef Deni’s first residency outside Mumbai, the pop-up brings his distinctive culinary approach to the Capital. Rooted in his Indonesian heritage and shaped by the precision of Japanese traditions, his cuisine reflects a thoughtful balance of authenticity, craftsmanship and contemporary expression. With over two decades of international experience across some of the world’s finest luxury hotels and restaurants, Chef Deni has earned recognition for creating refined dining experiences that celebrate the richness and diversity of Asian flavours.

The specially curated menu reflects this philosophy through a collection of comforting classics, signature small plates and refined mains. Guests can savour bowls of Shio Kombu Ramen and Shoyu Ramen, starters such as Nonya Karaage, Kerang Bakar with scallop and Indonesian bumbu sauce, and Himalayan Crispy Morels, before moving on to mains including Steamed Chilean Seabass with Black Bean Sauce, Katsu Chicken Curry, Tempeh Orek, Nasi Goreng, Sanuki Udon and Teppan Vegetable Rice. The experience concludes on a sweet note with Mango Pudding Brûlée, inspired by mango sticky rice, and a delicate Basque Yuzu Cheesecake.

Hosted at House of Ming, the residency unites two distinctive culinary expressions within the Taj portfolio. Combining House of Ming’s celebrated dining experience with Nonya’s contemporary interpretation of Indonesian, Japanese and Southeast Asian cuisines, the collaboration offers guests an immersive journey through authentic flavours, refined techniques and thoughtful craftsmanship.
