BANNG Mumbai is hosting A Journey Through Thailand, an 11-course dining experience curated by chefs Garima Arora and Manav Khanna, celebrating the flavours and culinary traditions of Thailand’s four regions: North, North-East, Central, and South.

Designed as a seated dinner, the menu moves through Thailand one course at a time, bringing together regional ingredients, familiar flavours, and traditional preparations across both vegetarian and non-vegetarian menus.

With this menu, we wanted to recreate that feeling for our guests, the excitement of discovering something new, moving from one region to another, and experiencing the country through a curated journey rather than a single dish. It’s our way of bringing a little more of Thailand to Mumbai, one course at a time. ,” said Vicky Singh, Partner at BANNG

“Thai cuisine has always been about balance and depth be it spice, herbs, and freshness coming together in every bite. With this menu, we wanted to move beyond interpretation and instead bring together dishes that feel personal, rooted in tradition, and true to the way food is experienced across different regions of Thailand,” says Chef Partner Garima Arora

The meal begins with Yum Pollamai, a refreshing Thai summer salad featuring seasonal fruits dressed with lemongrass, shallots, chillies, roasted chilli, watermelon gel, tamarind candy, and a tableside watermelon granita.

Guests then move into Three Bites of Thailand, a trio showcasing flavours from across the country.The first bite is Somtam, BANNG’s contemporary take on the iconic Northeast Thai salad. reimagined in a contemporary approach that it brings together papaya, peanuts, cherry tomatoes, green beans, and tamarind leaves, capturing the bright, sour, and refreshing flavours that define the dish, followed by Kai Yor, a chicken sausage salad tart and Golae, a Southern Thai-style grilled protein served on brioche with pickles. The vegetarian menu features thoughtfully adapted versions including Taoho Yor and Eggplant Golae.

The journey continues with Khao Tang Na Tang, a dish rooted in Thai royal traditions, where leftover rice is transformed into crisp rice crackers and served with a creamy red curry dip. This is followed by Betel Leaf, inspired by the relish-driven cuisine of Northern Thailand, featuring fried betel leaf paired with traditional tomato and eggplant relishes.

Guests are then served a course centred around Thailand’s beloved chilli jam, featuring prawns on the non-vegetarian menu and asparagus with bamboo shoot on the vegetarian menu.

The experience continues with Hor Mok, an Isan-style steamed preparation of fish or mushroom infused with chilli, lemongrass, shallots, herbs, and sticky rice served alongside fresh herbs and cucumber. A comforting bowl of Tom Khamin, a turmeric-forward broth from Southern Thailand, follows as a palate-cleansing course before the main meal.

The main course is served family-style, centred around Massaman curry. Guests can choose between smoked duck or a vegetarian preparation of potato and jackfruit, accompanied by vegetable rice with pomelo, fresh salad with pickles and oranges, roti, fried cashews, and shallots.

Desserts begin with Luk Tan Loy Kaew, BANNG’s interpretation of the classic Thai palate cleanser, featuring fruit infused with jasmine and served with a refreshing granita. The experience concludes with Thai Tea, an airy Thai tea mousse with coconut jelly, and Coconut, inspired by Thailand’s iconic ice cream carts, combining coconut ice cream, sticky rice, peanut butter, and crisp khanom buang for a playful finish.

“This menu is built as a progression through Thailand’s culinary landscape, from street-side flavours to regional home-style cooking. Our focus was to respect traditional techniques while presenting them in a way that feels contemporary, layered, and balanced for a modern dining experience,” says Chef Manav Khanna
