Veg Shanghai Tri-Colour Dumpling

Recipe
Ingredients:

Wheat Starch Powder: 3 tbsp
Potato Starch Powder: 2 ½ tbsp
Fresh Mushrooms: 2 ½ tbsp
Mix Vegetables: As per requirement
Cooking Wine: ½ tbsp
Oyster Sauce: 1 tbsp
Chilli Paste: ½ tbsp
Sesame Oil: 1 tbsp
Dark Soy: 1 tbsp
Butter: ½ tbsp
Salt to Taste
Aromatic Powder: ½tsp
White Pepper: ½ tsp
Garlic Chop: 1 tsp
Celery Chop: ½ tbsp

Method:

Preparing the Filling:
1. Chop and Blanch: Finely chop all vegetables and blanch them for a brief period.
2. Sauté and Season: Toss blanched vegetables in a frying pan with the provided ingredients (butter, garlic, celery, and seasonings).
Making the Dumplings:
3. Prepare Dough: Create a dough using wheat and potato starch, dividing it into three parts for different colors.
4. Roll Out Wrappers: Roll out the colored dough into thin sheets and cut into circles.
5. Assemble: Place a spoonful of the prepared filling in the center of each wrapper and seal.
Cooking and Serving:
6. Steam: Steam the assembled dumplings for 4-5 minutes.
7. Serve: Serve the steaming hot tri-color dumplings with your preferred condiments.

Sushi

Veg California Uramaki

Recipe
Ingredients:

Sushi Rice: 3- 4 tablespoons
Avocado: 100gm
Cucumber: 50gm chopped
Sushi Vinegar: 3 ½ tablespoons
Mirin: ½ tablespoons
Sugar: ½ tablespoons
Pickled Ginger: ½ tablespoon
Wasabi: ½ to 1 tablespoon
Soy Sauce: 1 tablespoon
Japanese Mayo: ½ tablespoon

Method:

1. Prepare Rice: Cook sushi rice and mix with sushi vinegar, mirin, and sugar.
2. Cut Fillings: Slice avocado and cucumber into long strips.
3. Assemble: Place a sheet of nori on a sushi mat, rice side down. Add fillings.
4. Roll: Use the mat to roll the sushi into a tight cylinder.
5. Cut: Slice the roll into bite-sized pieces.
6. Serve: Serve with pickled ginger, wasabi, and soy sauce.
Tip: Moisten your hands slightly to prevent rice sticking while rolling.

Tiranga Paneer Tikka

Recipe
Ingredients:

Tandoori Masala-:
Orange Masala-1 tbsp
White Masala-1 tbsp
Green Masala-1tbsp
Cottage Cheese-200gm
Hund Curd-3 tbsp
Mustard Oil -2 tbsp
Deggi Mirch Powder-2tbsp
Turmeric Powder-1/3 tsp
Kitchen King Powder- 2tsp
Lemon Juice-1tsp
Green Chilli chop -1tsp
Ginger and Ginger Paste-1/2 tbsp
Coriander Powder-2 tsp
Jeera Powder-1/2 tsp
Garam Masala Powder-1/3 tsp
Green Coriander Leaves
Onions
Fresh Cream
Bell Pepper

Method :

Prepare Marinades: Combine cottage cheese with each masala color separately to create three marinades.
Cut and Marinate: Cut paneer and vegetables into cubes. Marinate them in the respective colored marinades.
Grill: Grill marinated paneer and vegetables until cooked through and slightly charred.
Serve: Garnish with green coriander, onions, and fresh cream. Serve hot.
