BANNG Mumbai, in association with the Tourism Authority of Thailand (TAT), is hosting A Journey Through Thailand, an 11-course dining experience curated by chefs Garima Arora and Manav Khanna, celebrating the flavours and culinary traditions of Thailand’s four regions: North, North-East, Central, and South.

Designed as a seated dinner, the menu moves through Thailand one course at a time, bringing together regional ingredients, familiar flavours, and traditional preparations across both vegetarian and non-vegetarian menus.

The meal begins with Yum Pollamai, a refreshing Thai summer salad, followed by Three Bites of Thailand, featuring combinations such as Somtum, Kai Yor, and Prawn Golea on the non-vegetarian menu, alongside Somtum, Taoho Yor, and Eggplant Golea on the vegetarian menu. The next course, Khao Tang Na Tang, pairs crispy rice crackers with creamy pork dip or pumpkin dip.

The experience continues with Betal Leaf served with a duo of relishes, before moving into courses like Prawn with chilli jam for the non-vegetarian menu and Asparagus and Bamboo Shoot for the vegetarian menu. Guests are then served Hor Mok, an Isan-style preparation featuring steamed fish or mushroom with sticky rice, followed by Tom Khamin, a turmeric broth inspired by Southern Thailand.

The main course is served family-style, with Smoke Duck Massaman on the non-vegetarian menu and Potato Massaman on the vegetarian menu, accompanied by rice, paratha, and salad.

Desserts include Luk Tan Loy Kaew with ice apple and jasmine, Coconut, inspired by Thai ice cream carts, and Thai Tea, an airy Thai tea dessert served with coconut jelly.
