dore, a new cocktail bar opens with a quietly ambitious idea – to approach Rajasthan not as nostalgia or a grand spectacle, but as an evolving culture shaped by tradition, ritual and survival. Named after the local word for thread, dore is built around the idea of connection – between past and present, story and flavour.
The concept is helmed by Pranav Sharma and Sagar Neve, whose strengths lie in research and execution. Pranav, with a background in hotels, through experience with Marriott’s corporate ecosystem at Design Hotels in Berlin and project management through developing properties across India and the US, has approached dore with the rigour of a lasting hospitality concept – one rooted in cultural study and operational clarity. Sagar, a stalwart of the FnB scene in the country, known for creating and operating Ekaa, Bombay Daak, KMC, and Shad Skye, brings in an intuitive understanding of how culture translates into a bar that people would return to again, and again. Together, their focus has been singular: to let Rajasthan speak for itself, one glass at a time.
At dore, cocktails function to present narratives; each of the 20 signature cocktails become a vessel for tradition, folklore, or ingredient. Inspired by tradition, the Janana / Mardana cocktail draws from the practise of segregating the ladies and gentlemen of the gathering but explores the fundamental reason for the separation through parallel builds sharing the same underlying philosophy. The Kuldhara cocktail pays homage to the story of the abandoned village of Kuldhara, playing with restraint and absence through lingering use of aromatics to evoke a story that is felt rather than being told. The land sets the table in Rajasthan—hardy Sangri, ever- present camels. Ode to Camel unites these enduring ingredients, blending Sangri’s earthy intensity with the depth of camel milk, and presenting tradition through a contemporary lens.
The experience at dore unfolds organically over the day. As the sun sets, the rooftop transitions into a space that feels intimate yet open—designed for conversation, discovery, and unhurried drinking. There is no performance of heritage here, no excessive ornamentation. Instead, dore lets technique, research, and flavour do the work.
At its core, dore is about connection without pretension—between belief systems and bar craft, between myth and method, between Rajasthan as it was and Rajasthan as it continues to evolve. It is not a reinterpretation for effect, but a careful weaving of threads that were always there – weaving Rajasthan in the Glass. This philosophy is carried through every touchpoint, shaped in collaboration with Chipper Creative, the branding partner that translated these layered narratives into a cohesive visual and verbal identity.
