Mille – The Dessert Bar, Hyderabad
1. Hazelnut Layer Cake
Mille’s most popular bake is something that one of Chef Anuhya’s closest friends requests for their birthday every year, without fail. No trends, no changes- just the same combination they fell in love with. A soft vanilla sponge, layers of chocolate, and toasted hazelnuts woven through it all. It’s simple, familiar, and somehow never gets old.
When we brought it to Mille, we didn’t want to dress it up too much or take away from that feeling. We just translated it into our language. We reimagined it as a sheet cake where the vanilla stays light, almost cloud-like.
The milk chocolate ganache has a nutty, toasted note. And the hazelnut is turned into a praline to make feuilletine for that quiet, addictive crunch. It still tastes like something made for someone specific. Just now, there’s enough of it to share.
2. Plated Dessert: Skull – Death by Chocolate
Elements: Chocolate crémeux, praline crunch, flourless chocolate cake, nutty filling, dark chocolate shell, warm red sauce
Description: An intense study of chocolate in multiple textures- silky, dense, and crisp. The shell breaks to reveal a layered core, finished with a dramatic warm pour. Decadent, immersive, and unapologetically indulgent.

Neon Castle Mysuru – MUD-DONNA Dessert Pot
Some desserts don’t need elaborate introductions. They simply arrive at the table and leave a lasting impression. At Neon Castle, MUD-DONNA is one such creation, a comforting, indulgent dessert that celebrates the timeless pairing of chocolate and ice cream.
The story of MUD-DONNA begins with co-founder Keerthana’s homemade chocolate cake. What started as a deconstructed interpretation of a cherished recipe gradually evolved into one of Neon Castle’s most loved desserts. Even the clay pot it is served in carries a story of its own, custom-made by local artisans from the town of Doora. The name, meanwhile, is a playful nod to the iconic pop star Madonna, reimagined through Neon Castle’s signature sense of creativity.
Served in a rustic clay pot, MUD-DONNA features layers of crumbled chocolate cake, rich chocolate ice cream, and toasted nuts. Each spoonful brings together contrasting textures and flavours, the softness of cake, the creaminess of ice cream, and the satisfying crunch of toasted nuts. As the ice cream slowly melts into the cake, the dessert transforms into a decadent medley of chocolate, warmth, and nostalgia.
Whether you’re a devoted chocolate lover or simply looking for a dessert worth lingering over, MUD-DONNA is a reminder that sometimes the simplest combinations create the most memorable experiences.

Sahtain: Kahwa Chocolate Mousse
In many Middle Eastern homes, Kahwa is more than a drink. It is the beginning of a conversation, a gesture of welcome, a ritual of gathering. This World Chocolate Day, Sahtain draws on that tradition with their Kahwa Chocolate Mousse, where the familiar warmth of Arabic Kahwa finds an unexpected companion in chocolate.
Made with 70% Guanaja chocolate, the mousse is layered with the gentle bitterness and aromatic depth of Kahwa before being finished with a bright cherry compote. The result is a dessert that feels measured rather than indulgent, allowing each ingredient the space to reveal itself without overpowering the next.
It is a fitting expression of Sahtain’s approach to North African and Levantine cuisine, where recipes are shaped as much by memory and hospitality as by flavour. This World Chocolate Day, the Kahwa Chocolate Mousse offers a gentle reminder that sometimes the most memorable pairings are the ones that have always belonged together.

PHURR – Baby Plants
Chocolate has always belonged to nature. It begins as cacao pods, grows from the earth, and carries with it the richness of the soil it comes from. This World Chocolate Day, PHURR returns chocolate to those roots with Baby Plants, a dessert that transforms the forest floor into something entirely edible.
Dark chocolate sponge is crumbled into a bed of rich “soil”, scattered with crunchy chocolate-coated nuts that resemble pebbles hidden beneath the earth. Delicate microgreens emerge from the chocolate, while two scoops of vanilla ice cream bloom like tiny white flowers waiting to be discovered. To finish, warm chocolate sauce is poured over the dessert, gently soaking the soil much like rain nurturing new growth.
This World Chocolate Day, Baby Plants is a reminder that some of the most thoughtful desserts don’t just celebrate chocolate. They celebrate where it comes from.
